About Us
The Roasted Fig, our first brain child (hopefully, many more will come!) began in early 2014 when we had the idea of starting a company where we could offer the kind food we enjoyed to eat: fresh, natural, and tasty.
Since we began dating in late 2011, food has always been a common passion for us both. Freddy is the out of the box thinker who enjoys gardening and tending to his many animals while Mariana is the analytical thinker who rarely strays from a thought-out plan. But through The Roasted Fig, we have been able to put together our very different skill sets and interests to create a "mirepoix" of ideas.

About the Chef
Chef Freddy Kunkel was born and raised in Panama City, Panama in the melting pot of the Canal Zone culture. Growing up in a country with diverse cultures, he was exposed to a variety of cuisines including, Central American, Asian, and American foods. After 21 years in Panama, he left for Orlando, Florida to study Culinary Arts at Le Cordon Bleu. Soon after graduating, Chef Freddy moved to Fort Lauderdale to begin his culinary career at a few local fine dining restaurants, including the historic landmark, The River House, YOLO, and The Grateful Palate. While at The Grateful Palate, he earned his way up to Sous Chef, under the supervision and mentoring of Executive Chef Hector Lopez. In February 2013, The Grateful Palate and its staff were featured on PBS' Check Please! South Florida. Chef Freddy's work at The Grateful Palate included yacht provisioning, as well as extensive catering. His aim now is to provide a personalized approach to your culinary experience.
